Food Q&A and a Recipe

This week's question is fruit

Parents of young children often ask me how to get their kids to eat more fruits and vegetables. Recently, a mom who has a six-year-old daughter asked me how to get her daughter to eat more fruits.

Question: How do I get my daughter, who is 6 years old, to incorporate fruits into her diet?

My answer to that is make a fruit smoothie for breakfasts which can then be used as an afternoon or evening snack.

Fruit Smoothie Recipe:

  • 2 frozen organic bananas
  • 1 cup fresh organic strawberries (or blueberries)
  • 1 cup almond milk (hemp or rice milk works beautifully as well)
  • ½ cup orange juice
  • 1/3 cup honey
  • 1 teaspoon vanilla extract.
  • Optional: Add 1 cup plain organic yogurt

Put in blender and blend up to desired consistency.  Add more milk or juice as needed.

One of the wonderful things about this smoothie is that leftovers can be put into icepop containers (always use BPA free) and frozen to be eaten as an afternoon snack or evening treat.

2 times the amount of fruit!!

PS: Laura, the mom, has since called me to let me know how much her daughter loves the fruit smoothies and how thankful she is to have found an easy solution to her dilemma.
