A spicy cole slaw

Hot Diggity Slaw is an old fave of mine from Jane Brody's "Good Food Gourmet."
The dressing:
1/4 cup natural peanut butter
1 T fresh lime juice
1T grated gingerroot
2 t grated garlic
2t sugar
1 t soy sauce
1/4 cup water

The salad:
up to 2 lbs of green cabbage, cored
2 sweet peppers, cored and seeded
1 large onion, peeled
1-3 jalapenos, seeded and minced
1/3 cup chopped unsalted peanuts

Prepare the dressing by combining all the ingredients but the water, then add the water gradually, whisking it in till it's as thick as mayo. don't refrigerate. 

Shred the cabbage and cut the peppers and onion into slivers. Chill.

Before serving, toss the salad with the dressing and add the peanuts.
